Moira’s Apple Tea Cake

Ingredients

  • Sifted Self Raising flour 1cup

  • Caster sugar  3/4 cup

  • eggs, lightly beaten  2

  • butter, melted    125g

  • green apples, peeled & cored  2

  • cinnamon 3/4 tsp

  • nutmeg 3/4 tsp

  • 2/3 cup flour

  • vanilla essence 1/2 tsp

  • extra cinnamon, nutmeg and raw sugar for topping

Method

Line 21cm dia springform baking tin with baking paper
Mix all ingredients together

Pour mixture into the tin and spread out evenly

Sprinkle extra cinnamon, nutmeg and raw sugar on top of mixture

Bake at 190º C for 40 to 45 minutes until top is crunchy and middle is cooked.

 

For a larger cake double the quantities and use a lamington tray
